BIG CAN CHEESE is family owned and operated.

It all started one fateful evening, many years ago, at a small family gathering.

The hosts put out charcuterie. Their son, three years old at the time, eagerly scurried up to the counter and asked for help piling up as many different kinds of cheese and crackers as he could fit on his plate. This was not out of the ordinary, this was a boy who loved cheese.

However, on this day, there one kind of cheese that was a particularly stinky cheese and it had flavor that lingered. It was the kind of cheese that cheese connoisseurs rave about at the fanciest and most exclusive cheese gatherings. They go into great detail discussing its flavor notes, earthy aroma, and texture; but secretly they all scrape off of their plate into a potted plant when they think no one is looking.

At the previously mentioned family gathering, a few of the adults discover the potent nature of this cheese. None pretended to like it. They had a few laughs about how bad it was and continued on with their evening. Until they heard the sounds of panic and disgust from across the room. Oops… Nobody thought to warn the children. That little boy who was so excited for his plate piled high with cheese and crackers had stuffed his mouth full of that stinky cheese and was instantly traumatized.

From that day forward the little boy wouldn’t eat any cheese or anything that looked like it could possibly be cheese. That is, until we cut to about 4 years later. When the boy was picked up from school one day, he was excited to tell his parents about the delicious new kind of food he had for lunch that day. “It was like chips and salsa, but it wasn’t liked our salsa. It creamy and kinda yellow and there were no chunks in it. Can we have it for dinner some time?” That was his first experience of cafeteria nachos. It was the perfect storm. It didn’t look like it could possibly be cheese, but technically it was cheese.

The parents wanted to oblige the boy and make his favorite new school lunch at home for dinner one night, but where does one even get that kind of cheese. As far as they knew it was only available in school cafeterias and at sporting events. Most likely it could only be bought in bulk from a distributor and probably comes in a 1 gallon can that just says “CHEESE” on the label.

On that day, BIG CAN CHEESE was born.
